Lillian’s Luscious Matzah Balls

Ingredients

  • 4 eggs
  • 4 T chicken fat (Empire or other kosher brand)
  • 4 T. Club Soda
  • 1 c. matzah meal mixed with 1 T. salt & pepper combo (I use Himalayan rock salt or sea salt only with fresh ground pepper)

Directions

  • Beat eggs
  • Add chicken fat, club soda and matzah meal and continue mixing until blended
  • Refrigerate mixture for at least an hour
  • Form matzah balls (you can make any size, but about 2 inch diameter is best) by using cold water on your hands to keep meal from sticking
  • Gently drop(a slotted spoon works best) in large pot of salted boiling water and boil GENTLY for about 40 minutes until they float.
