Raw Beets, Carrot & Apple Salad with Ginger Lime Dressing

Ingredients

  • Lime or Lemon Juice 3-4 Tbs
  • 1Tbs. honey
  • 1 Tbs finely grated ginger
  • 1-2 Tbs. olive oil
  • 2 cups raw grated beets
  • 1 3/4 cup carrots
  • peeled and grated
  • 1 3/4 cu of Apples peeled and grated
  • 1/2 up of chopped walnuts

Directions

  • First make ginger lime(lemon) dressing by combing lime juice,honey and ginger in mixing bowl. Whisk in oil and set aside or put in processor.
  • Then in large bowl, combine grated beets, carrots, and apple.
  • Toss in the dressing a refrigerate until ready to serve.
  • This is a quick preparation and can be used as a salad dressing o r relish, or salsa, or topping for a meat, chicken or fish dish.
Perfect for Passover.
