Potato Carrot Kugel
Ingredients
- 3 1/2 pounds russet potatoes, grated
- 3 carrots, grated
- 1 large onion, chopped
- 2 eggs
- 2 tablespoons oil + extra for oiling the pan (or butter or margarine)
- 5 tablespoons matzo meal
- 2 teaspoons salt
- pepper
Directions
- Grease or oil a 9 x 13-inch baking dish.
- Preheat the oven to 400.
- Grate the potatoes and carrots and place them in a large bowl.
- Beat the eggs in a small bowl and add them to the grated potatoes and carrots with the remaining ingredients (the chopped onion, the oil, the matzo meal, and the salt and pepper.)
- Pour the ingredients into the baking pan.
- Bake for approximately 1 hour until the top is brown.
- Grease or oil a 9 x 13-inch baking dish.
