Salmon Cakes

Ingredients

  • Canned salmon (about 16-18 ounces)
  • diced onion
  • egg
  • dollop of sour cream or yogurt
  • ketchup
  • lemon juice
  • salt & pepper to taste
  • bread crumbs (optional)
  • matzoh meal

Directions

  • Combine all ingredients except for the matzoh meal.
  • Form the salmon mixture into balls and roll in the matzoh meal.
  • Fry until golden brown to almost burnt (depending on your taste).
  • The salmon cakes can also be baked in the oven at 350 degrees until done.
