Fish Cakes

Ingredients

  • 2 lbs. cod fillets
  • 1/2 cup uncooked oatmeal
  • 2 carrots
  • 1/2 small grated onion
  • 4 med./lg. potatoes
  • salt and pepper
  • 3 lg. eggs
  • peanut oil

Directions

  • Cook fish, cut carrots and cut and peeled potatoes together in water until soft.
  • Drain thoroughly and mash mixture.
  • Add oatmeal to beaten eggs and then add to fish mixture.
  • Season with salt and pepper and add onion.
  • Mix together and then form into 12 fish patties.
  • Place patties in refrigerator for one hour.
  • Preheat oven to 400 degrees.
  • Coat bottom of a flat pan with peanut oil and place in oven until oil sizzles.
  • Add patties to pan and bake in oven 10 minutes.
  • Lower heat to 350 degrees and bake for 15 more minutes.
  • Then turn patties for about 20 more minutes or until golden brown on both sides.
  • Place on paper towels on brown paper for two minutes and then serve.
  • Leftover patties can be frozen in foil and heated in the same foil for about 1 hour at 350 degrees.
Try topping it with homemade Russian dressing or sriracha.
