Chocolate Coconut Cookies

Ingredients

  • 1 6 oz package semisweet chocolate chips
  • 1 3.5 oz package of sweetened, shredded coconut
  • 1 egg
  • 1/2 c. brown sugar
  • 1 tsp. vanilla
  • dash of salt

Directions

  • Preheat oven to 325 degrees.
  • Melt chocolate chips in double boiler over hot water.
  • Remove from stove and let cool.
  • Beat egg and salt until thick.
  • Beat in sugar.
  • Fold in chocolate, coconut, and vanilla.
  • Drop by rounded teaspoon on baking sheet covered with foil.
  • Bake 10 minutes.
  • Remove from oven and cool 10 minutes on baking sheet.
  • Remove from baking sheet and cool on wire rack.
Makes 2 dozen.
